| Bring in the sunshine of summer with our
tender tropical cookies--stuffed with Romolo chocolate, of course!

teaspoon dried orange peel
2 tablespoons orange juice
1 cup unsalted butter
1 cup sugar
½ cup brown sugar
½ teaspoon vanilla
½ teaspoon orange extract
2 eggs
2 1/3 cups flour
¾ teaspoon salt
1 teaspoon baking soda
1 lb. Romolo milk or dark bulk chocolate, chunked

1 cup coconut (optional)
Heat
oven to 350°F.
In small bowl, mix together orange peel and orange juice and let
sit 10 minutes. Meanwhile,
cream butter, sugars, vanilla and orange extract in large bowl.
Mix in eggs and orange juice with peel.
Wisk together flour, salt and soda in separate bowl.
Gradually add to wet ingredients.
Mix in chocolate chunks and coconut (if desired).
Place dough by heaping spoonfuls onto cookie sheet and
bake 10-12 minutes or until lightly browned.
Makes 24 large cookies.
